WINEMAKING CHARACTERISTICS
The harvest of this vineyard is done manually, early in the morning, in boxes of 15 kilos. A selection of the best grapes is made on a sorting table, and the grapes are then vatted in our self-emptying stainless steel tanks until they reach a temperature of 12 degrees Celsius. It is macerated for 12 hours before increasing the temperature to 21 degrees, which will be the fermentation temperature. The wine will be aged in barrels for 11 months. The barrels are French oak and extra fine grain from the best cooperages in the world.
