Has the way cheese is produced changed much since the past?
The most important element remains the same as it was 400 years ago: the cheese is made with milk from free-grazing animals. Today, cheese is produced in an artisanal or industrial way.
The difference between artisanal and industrial cheese depends on the type of milk used in its production. If the cheese is produced with raw milk, it is an artisan cheese. An industrial cheese, on the other hand, is made with pasteurized milk.
The type of milk used also influences the flavor of the cheese. An artisan cheese has a more varied flavor, since it retains more of the flavor of the wild herbs and grasses that feed the sheep. Industrial cheese, on the other hand, has a sweeter and more homogeneous flavor.
Semi-mature? Cured? Old? What is the difference?
Semi-cured cheese is normally aged between 60 and 150 days. It is a milder cheese that does not have the sharpness of more mature cheeses. Cured cheese is aged between 6 and 11 months. It is usually darker, with a stronger flavor, and even a little spicy. The old cheese is aged for a minimum of 12 months and has actually lost all its moisture, so it has a very intense and pungent flavor.
